3 Layer Upside Down Apple Almond Cranberry Breakfast Cake

When I saw this 3 Layer Upside Down Apple Pecan Breakfast Cake post on Oh She Glows I knew I had to try it.  It was amazing!  Since the only store I have ever seen pecans in Japan is Costco I decided to change the nuts.

Here are the changes I made to the original recipe:

  • added a hand full of dried cranberries and put them in with the apple layer
  • used one Japan-sized apple
  • used half whole wheat and half all purpose flour
  • used butter
  • skipped the maple syrup
  • made cranberry sauce (dried cranberries blended with water) to use instead of apple sauce (only had one apple)
  • used almonds instead of pecans

  1. I made this yesterday – probably followed the original more as I had lots of apples for the applesauce and I had pecans. But I added dried cranberries too. Super yum and even hubbilicious was into it and he is usually a yoghurt and fruit only breakfast eater.
