Sweet Potato Cakes


This is a great substantial breakfast on a rainy morning. I used cinnamon as flavoring but will try black sesame next time. I used a cold precooked sweet potato from the fridge but a freshly cooked one would be fluffier.

Sweet Potato Cakes

Makes four

1 large sweet potato, cooked, peeled and mashed (I microwaved mine)
1 egg
2 splashes of milk (I used soy)
Cinnamon to taste

Mix everything up in a bowl (or food processor). Only add enough milk to get them to stick together. Make into patties. Fry on low heat until heated through. Serve hot. You don’t actually need any toppings but butter would be amazing.

  1. Vanilla is great in these types of things, too! And though it’s not necessary for added sweetness, even a little brown sugar will add a flavor dimension and more browning.
